In particular, today we want to introduce you our shelled almonds. They are obtained from sweet almonds (Prunus Dulcis), a particular variety that grows in the USA, Spain and Italy.

A wide variety to meet every need of our customers. We also carry out tailor-made processes for each of our customers, therefore we are able to produce custom-made almond sizes, down to the millimeter. HOW DO WE SHELL OUR ALMONDS?

We are a Smart Factory 4.0 and thanks to the modern digital technologies at our disposal, almond shelling processes are also carried out in a precise and rigorous way. Without damaging, however, the authenticity of the product.

To obtain excellent shelled almonds, we follow natural procedures that include immersion in boiling water. This thermal shock causes the natural detachment of the integument, which is then removed by food-grade rubber rollers. Finally, the almonds are dried and cooled before being sent for quality control to our digital sorters and metal detectors.

The control phase on freshly shelled almonds is essential because we are able to:
– Identify and exclude non-compliant fruit
– identify and exclude any foreign matter

The digital controls are also followed by the checks carried out in the internal laboratories. Our specialized team analyzes almonds in depth. Food safety is, in fact, our first goal.

At the end of the quality controls, the shelled almonds are “calibrated” with our sieves, in order to obtain a custom-made product, compliants to the requests of each of our customers. In fact, we supply the major food and confectionery industries in Italy and Europe and each one has different requests and needs. Satisfying them is our job.
